Vegan, gluten free, sugar free chocolate mug cake

Not the healthiest recipe and I strongly believe that mug cakes will never replace real cakes in my diet but sometimes I crave a sweet treat and when I don’t want to wait more than 2 minutes to get it this is usually what I go for. I actually enjoy the texture of this one more than what I got from pre-Lyme (regular) mug cakes.


2 tablespoons of any vegetable fat (I have tried several spreads and coconut oil and they all taste good, experiment to find your favourite or use whatever you have on hand, as long as they don’t have a strong taste).

1  and 1/2 tablespoon of cocoa powder

3 tablespoons of maple syrup

4 tablespoons of self raising gluten free flour

4 tablespoons of plant based milk (I use almond but I am guessing they would all work)

Mix the ingredients in a mug (in the order I listed them, stirring after each one) then bake in your microwave for 30 seconds at full power. If still liquid on top cook more in 15 seconds intervals, checking every time. Enjoy alone or with coconut yoghurt and frozen berries.
